Bacon Wrap Pork Tenderloin

Bacon is deliciously crispy on the outside while pork tenderloin is moist and tender with cheesy spinach filling.

Ingredients:

butter, onion, garlic,  spinach  bread crumbs pork tenderloin romano/parmesan  feta cheese bacon salt and pepper to taste kitchen twine and toothpicks

Saute onion, garlic in butter then add bread crumbs and spinach until wilted.

Butterflied pork tenderloin topped with cheese and spinach mixture.

Roll pork into a log. Note: Version using  pork shoulder instead of pork tenderloin.

Pork is wrapped in bacon and secured with kitchen twine and toothpick.

Bake at 350 degrees F for 50-60 minutes covered then 20 minutes uncovered for crispy bacon.
