Bacon Wrapped Stuffed Pork Tenderloin

with Spinach and Cheese

Crispy on the outside, tender and moist pork loin in the inside stuffed with delicious cheese and spinach.


butter, onion, garlic,  spinach  bread crumbs pork tenderloin romano/parmesan  feta cheese bacon salt and pepper to taste kitchen twine and toothpicks

Saute onion, garlic in butter then add bread crumbs and spinach until wilted.

Butterflied pork loin topped with cheese and spinach mixture.

Roll pork into a log. Due to stay at home orders last year, I improvised and used pork shoulder.

Pork is wrapped in bacon and secured with kitchen twine and toothpick.

Bake at 350 degrees F for 50-60 minutes covered then 20 minutes uncovered for crispy bacon.
