Eggnog Cookies

These eggnog cookies are deliciously soft, not too sweet with a subtle blend of spices topped with a not too rich eggnog frosting, sprinkled lightly with nutmeg.


Cookie Dough: flour, baking powder, salt, nutmeg, cinnamon, unsalted butter, sugar, brown sugar, eggs, vanilla, rum, eggnog Frosting: butter, eggnog, rum extract, powdered sugar

In a bowl, combine all the dry ingredients of cookie dough.  In a mixer, blend all wet ingredients then add dry ingredients.

Scoop a heaping tablespoon of dough and place in baking sheet lined with parchment paper. Space each cookie by 2 inches. Bake 11 – 13 minutes.

Make eggnog frosting and top cookies once completely cool. Sprinkle lightly with nutmeg.
