TAMALE MAIN INGREDIENTS:

Soak corn husk in hot water to make it pliable. Dry before using.

MAKE CHILI COLORADO SAUCE:  Boil dried Ancho or New Mexico chili peppers, then puree. Some sauce will be added to pork filling and masa dough.

MAKE PORK FILLING: Combine shredded pork and Colorado sauce until sauce is reduced.

MAKE MASA DOUGH:  Buy fresh from a Mexican store or make your own. Pork broth, lard, chili Colorado sauce and seasonings are added to masa harina.

ASSEMBLE TAMALE:  Spread a scoop of masa at half of corn husk, add pork filling then fold both sides and top. Secure with a tie but not necessary.

STEAM TAMALE:  1 1/2 hours in a steamer or 25 minutes in an instant pot.
