Ingredients
1 ½poundsBeef Shank
2Beef Bone Marrowoptional
1small onionpeeled and cut in halves
15peppercorn
3 - 5tablespoonsfish saucemaybe more
2large potatopeeled and cut in half
2corncut in half
bunch of bok choy or petchay
2saba bananacut in half diagonally
Instructions
In a large pot, add 8 cups of water. Add beef shank and bone marrow. Bring to a boil and remove the scum or impurities.
Toss in the onion and peppercorn. Reduce the heat to medium-low. Simmer until meat is tender.
Once meat is tender, add corn and potatoes.
Add plantain banana and season with fish sauce.
When ready to serve, add bok choy or petchay.
Serve hot. Enjoy!
Notes
For a clearer soup, once it boils instead of removing the impurities dump the liquid. Wash the meat and the pot to remove the impurities sticking to it. Follow the recipe starting from step 1.
