2 Way of Making Multicolor Macarons
Assemble piping bag with tip and place it standing inside a tall glass. Flip the tip side up so it doesn’t leak the almond mixture.
If making white as the 2nd color, add the 1st gel color in the almond mixture. Don’t blend well instead just swirl the mixture with a fork. Transfer to piping bag and pipe using #12 tip.
If making more than 2 colors, it is easier to add the color directly in the piping bag. Tilt the glass with piping bag to one side and take the gel coloring and reach as far as you can inside the piping bag. Release some gel coloring going upwards. Don’t press too much coloring as it will alter the consistency of the macaron mixture. It will take longer to bake and macaron will get sticky. Once all colors are in place, add the almond mixture and pipe. Note: First few macarons piped might not show all the colors, eventually it will.
