Sinigang na Baboy Instant Pot is the classic delicious Filipino Sour Pork Soup made with pork, vegetables and a sour tamarind base.

Ingredients
1 ½poundspork ribs
1large onionquartered
2medium tomatoquartered
5small potatopeeled
4– 6 bunch of bok choy
¾of tamarind soup mix 1.05oz or 30g, pouch size is 1.41 oz – 40g
6cupsof water
salt or fish sauce to taste
Instructions
Add pork, onion, tomato, potato and water in the inner pot.
Place the condensation collector behind the cooker and plug the instant pot.
Put and close lid and turn the steam release handle to "SEALING".
Press “SOUP BROTH” to normal and high pressure. Adjust the time to 20 minutes.
After a few minutes the FLOAT VALVE will pop-up, an indication that the instant pot is pressurize and the countdown begins.
Once cooking time is done, "SOUP BROTH" program will no longer be lit. The display will show the elasped time. Example: L000
Time to press "CANCEL".
Wait when the FLOAT VALVE goes down before opening the lid. Note: You can also do a quick pressure release but be very careful when doing this. Refer to the manual for detailed instructions.
Turn the steam release handle to "VENTING".
Open the lid.
Remove scum or impurities and crush tomatoes with a kitchen utensil.
Press the "SAUTE" program and adjust the time to 30 minutes Note: You can assign anytime but I always put 30 minutes which I can cancel once I’m done sautéing. If you need more than 30 minutes you can press the SAUTE program again and adjust the time..
After a few minutes, display will turn to “HOT”.
Bring mixture to a boil.
Season with tamarind mix and salt if needed.
Add bok choy. Cook for a minute.
Press “CANCEL” to end the SAUTE program.
Serve hot. Enjoy!
Notes
If you like less sour soup then reduce the amount I have on my recipe. Start with .70 oz of tamarind soup mix and gradually add mix until desired taste is reached or vice versa.
