watermelon

diced

red onion
chopped

crumbled feta

olive oil

lime juice

honey

mint leaves
chopped and a few whole leaves for garnish
salt and pepper to taste

Instructions
Prepare all the ingredients.
Dice the watermelon or use a melon baller.
Alternate peel the cucumber or fully peel then dice.
Chop the red onion and mint leaves. Leave some whole mint leaves for garnish.
Place the watermelon, cucumber, red onion, feta and chopped mint leaves in a salad bowl.
In a small bowl, combine olive oil, lime juice and honey. Mix well. Pour this mixture in the salad bowl and combine all the ingredients.
Pepper to taste.
Chill for an hour before serving.
Feta is salty so I suggest to add salt before serving. Once the flavor has blended, taste and add salt if needed.

When using a melon baller, you can scrape the leftover watermelon and put it in the blender to make watermelon drink.
