116 ozRosaritaNo Fat Traditional
1medium yellow onionchopped
¼teaspoongarlic salt
¼teaspooncuminadd another ¼ tsp. if you prefer
1Vigo Saffron Yellow Ricecook according to label instructions
3cupsshredded lettuce
½cupshredded cheddar cheese
¾cupsour cream
10homemade or store-bought flour tortilla
slicesof jalapenooptional
your favorite salsa or hot sauce
Instructions
In a skillet over medium heat, saute onion until soft.
Add refried beans. Cook for 2 minutes.
Stir-in cumin and garlic powder. Continue cooking for another 2 minutes.
Season with salt.
Turn off heat and transfer to a serving bowl.
While cooking refried bean, prepare and cook Vigo rice. Follow the label cooking instructions.
Note: You can use white rice instead.
Assemble Cheesy Refried Bean and Rice Burrito.
Heat tortilla in cast iron or microwave.
Transfer tortilla on a plate.
Add 3 tablepoons of rice, 3 tablespoons of refried beans, 1 tablespoon sour cream, ¼ cup lettuce, some shredded cheddar cheese and some salsa or your favorite hot sauce. Roll into a burrito. Add some jalapeno if you like. Enjoy!
