Bring to a boil. Reduce heat and simmer for 20 minutes.
Enjoy hot or chilled ginger drink.
Once cooled, strain and transfer the drink to a pitcher and place it in the fridge.
Notes
If you like, keep the boiled sliced ginger and eat it like candy. Why waste it? The pungent flavor is not as strong but it can still help soothe a scratchy throat.
Store leftover ginger drink in the refrigerator up to 4 days. It is good chilled or warm it in the microwave.
If desired, you can add lemon, honey or cinnamon stick to your drink.
