In a large pot, add 3 inches of water (add salt if you like) then place the steaming rack, upside down metal colander or basket. Bring water to a rolling boil. If using a steamer, add 4 to 5 inches of water.
For pot – when water starts boiling slowly add lobster one at a time. For steamer, arrange lobster in multi-steamer. Cover with lid.
Before covering with lid, if you like you can do this step. It is optional but we love to squeeze lemon and sprinkle garlic powder over lobster.
Follow this guide for cooking time.
Lobster Size and Steaming Cooking Time
1 pound - 1 ¼ pounds 7-9 minutes
1 ½ pounds 9-11 minutes
2 pounds 11-12 minutes
3 pounds 12-14 minutes
5 pounds 22-24 minutes
Halfway through, if using a large pot, move the lobster from bottom to the top and vice versa. If using a steamer, switch the steamer trays. Be very careful when doing this, steam is very hot.
When done, open a female lobster. If roe (lobster caviar) is still black, put it back in pot and steam for a few more minutes until roe turns bright red.
Make dip or sauce. Melt butter in sauce pan in low heat. If using a microwave, cover bowl with saran wrap with a little bit of opening. Power microwave 15 seconds at a time until butter is melted. Make sure to cover bowl, butter can explode inside microwave if time is set too long. You’ll end up cleaning a big mess.

Notes
Do not overcrowd lobster to cook evenly.
Cook in batches, if you don’t have enough room in pot or steamer.
