Biko Kalabasa is a healthy and deliciois Filipino rice cake made with glutinous rice, coconut milk, sugar and kalabasa (squash) topped with latik (cooked coconut milk).

Ingredients
15pieceskalabasa (squash)cut 1 in x 1 in
1 ½ccoconut milk
¼cand 1 tablespoon brown sugar
¼cwhite sugar
½csweet glutinous rice
Instructions
Cook sweet glutinous rice with 1 cup water. Set aside.
In a pot, add coconut milk, kalabasa, brown & white sugar. Bring to a boil.
Adjust heat to low and cover. Simmer till kalabasa is soft.
When kalabasa is cook, use cooking utensil to mash squash to a puree. Keep stirring until mixture is smooth.
Simmer for another 5 minutes till mixture is reduced.
Add sweet glutinous rice and keep stirring for 15-20 minutes. Mixture consistency will turn sticky.
Turn off heat and transfer to a serving container or mold.
Add latik on top. Serve hot or cold.
Notes
You can add 2 tablespoons of condensed milk. This is optional. I don't like it too sweet.
