Simmer for another minute until sauce thickens into a syrup consistency.
Set aside.
Egg Foo Young Omelette
Beat eggs.
Stir in soy sauce, fish sauce and ground pepper. Mix.
Toss in onion, garlic, water chestnuts, celery and green onions.
Note: You may saute the onion, garlic, water chestnuts and celery before adding to the egg mixture. Cool down and add to egg mixture. I prefer it crunchy so I just add it raw to the mixture.
Add shrimp.
Toss-in bean sprouts.
Pour cornstarch and water mixture. Mix well.
In a frying pan heat oil over medium heat.
Spoon bean sprout mixture and fry both sides until golden brown.
