Shrimp Egg Foo Young is an omelette made with beaten eggs, shrimp, bean sprout and other veggies. Shrimp can be substituted with pork, beef, chicken or barbecue pork. In fact, you may toss-in any vegetables you have on hand to make egg foo young. Eliminate the shrimp or meat to make a vegetarian egg foo young.

This Shrimp Egg Foo Young recipe is so easy and simple to make. Most of the ingredients are basic. Aside from bean sprouts you can add any veggies you have in your fridge. Time to clean out your refrigerator.

You may combine the sauce with the omelette before serving. I prefer to serve it on the side. When there’s a left over I don’t like my omelette swimming in sauce and soggy.

What is Egg Foo Young?

It is a dish prepared with beaten eggs, your choice of meat (shrimp, pork, beef, chicken or lobster), a mixture of vegetables and served with a sauce. Also called Egg Foo Yung.

Can I substitute shrimp with beef, chicken or pork?

Yes. Saute the meat with onion and garlic. Cool down before mixing it with egg mixture.

Why do you add cornstarch with water to the sauce and egg foo young omelette.

Adding cornstarch dissolved in water will thicken the sauce and the omelet mixture.

I have no fish sauce can I just use more soy sauce?

Ingredients

Shrimp Egg Foo Young Omelette

  • 6 eggs beaten
  • 3 cups fresh bean sprout
  • 1 ⁄4 cup green onions minced
  • 3 tablespoon onions finely chopped
  • 3 cloves garlic minced
  • ¼ cup celery
  • ¼ cup water chestnuts minced
  • 1 ½ cups medium shrimp peeled and deveined
  • 2 teaspoons soy sauce
  • 2 teaspoons fish sauce
  • ½ teaspoon ground pepper
  • 2 tablespoons cooking oil
  • 2 tablespoons cornstarch
  • 4 tablespoons water

Shrimp Egg Foo Young Sauce

  • 2 ½ cups chicken broth
  • 2 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • ½ teaspoon sesame oil
  • ½ teaspoon ground pepper
  • 4 teaspoons vinegar
  • 1 table chicken bouillon
  • ¼ cup sugar
  • 1 tablespoon oyster sauce
  • ½ teaspoon garlic powder
  • 2 tablespoons cornstarch
  • 4 tablespoons water

Instructions

Shrimp Egg Foo Young Sauce

  • Combine cornstarch and water and set aside.
  • Pour water in a sauce pan over medium heat.
  • Combine soy sauce, fish sauce, sesame oil, ground pepper, vinegar, chicken bouillon.
  • Bring to simmer for a couple of minutes.
  • Stir constantly while pouring cornstarch mixture.
  • Add sugar, oyster sauce and garlic powder.
  • Simmer for another minute until sauce thickens into a syrup consistency.
  • Set aside.

Egg Foo Young Omelette

  • Beat eggs.
  • Stir in soy sauce, fish sauce and ground pepper. Mix.
  • Toss in onion, garlic, water chestnuts, celery and green onions.
  • Note: You may saute the onion, garlic, water chestnuts and celery before adding to the egg mixture. Cool down and add to egg mixture. I prefer it crunchy so I just add it raw to the mixture.
  • Add shrimp.
  • Toss-in bean sprouts.
  • Pour cornstarch and water mixture. Mix well.
  • In a frying pan heat oil over medium heat.
  • Spoon bean sprout mixture and fry both sides until golden brown.
  • When cook transfer to a serving plate.
  • Serve with sauce on the side.
  • Garnish with garlic onion if desired.
