big cucumber
seeded, grated & drained
β
teaspoon
salt
(for cucumber to drain liquid)
2 ΒΌ
cups
Greek yogurt
strained
5
gloves garlic
minced
4
tablespoons
olive oil
2
tablespoons
vinegar or 1 lemon
1
tablespoon
fresh dill
chopped
Salt and Pepper to Taste

Instructions
Peel cucumber and remove seed.
Grate cucumber and sprinkle β teaspoon salt to draw water out. Put on a strainer and drain the cucumber well. Set aside for 30 minutes.
Strain yogurt using a cheese cloth while waiting for cucumber to drain. Set aside.
Mix yogurt and grated cucumber in a bowl.
Toss-in garlic, dill, olive oil and vinegar.
Mix well.
Season with salt and pepper.
Refrigerate for an hour before serving.
Serve with pita, meat or veggies. Enjoy!
