Hot Zucchini Sauce
Ingredients
- 1 medium zucchini
- 2 tablespoons olive oil
- 3 garlic cloves crushed
- 3 tablespoons fresh basil chopped
- 2 fresh red chili deseeded and sliced
- Juice of 1 large lemon
- 5 tablespoons light cream
- 4 tablespoons grated Parmesan cheese
- Salt and Pepper
Instructions
- In a skillet over medium heat, heat oil.
- Saute garlic for 30 seconds.
- Add zucchini and cook for 5 minutes. Stirring occasionally over low heat.
- Stir in the basil, chili, lemon juice, cream, and Parmesan and season to taste.
- Remove from heat and pair with pasta, meat, fish or chicken.
