If you have seen fresh pinipig, it is soft and sticky. The imported pinipig also called young sweet rice flakes are harder in texture which I’m not fond of but at least we have it.
Pinipig is made from sticky rice also called glutinous rice or malagkit in Filipino language.
Some Filipino desserts call for toasted pinipig and it adds a crunchy texture to it.

I usually make extra servings of toasted pinipig so I have it ready any time I need it. It will keep well in an airtight container for a few months.
I use toasted pinipig in Filipino desserts and drinks. To name a few - Taro and Coconut Milk Drink with Toasted Green Pinipig, Ube Halaya, Haupia Pie, Halo Halo and many more.
Pinipig when toasted can be compared to a puff rice with a crunchy texture on the outside and a chewy center.
