All along my Mom was the cook in our household but since 2015 we have relieved her with this chore. Even though, it is a chore she enjoyed cooking. She has dementia which is unfortunate.
Sometimes she’ll asked me if she knew how to cook. I show her my site and I tell her that these are all her recipes and that she’s a better cook than me. My mom can easily replicate a recipe after tasting it.
When we were growing up, she constantly had a friend in the house or vice versa and they were learning new dishes. She was not a baker but once in a while they made different kinds of cake. The most popular to us was fruit cake. Here in the US no one cares for fruit cake but among Filipinos it is a big hit.
Anyway, this Shrimp and Mushroom Stir Fry is one of the dishes my mom routinely made. She is the pickiest eater among us and shrimp is her favorite.
Acquaintances who also knows my mom occasionally asked how she’s doing. They knew her as this sweet grandma with a smile on her face always. With dementia, she has turned into a grumpy old lady.
My mom has developed habits that is not good for her well being. She’s constantly touching her face or scratching her head with both her hands. I have no clue if this is anxiety or what?
Sometimes, we laugh and tell her she looks like a monkey. She might laugh with us and find it funny but most of the time she’s offended because she doesn’t even realize she's doing it.
I’m sure she doesn’t appreciate the constant reminder from everyone to stop touching her face or scratching her head. We can stop telling her but we care and love her dearly.
Due to the pandemic, she hasn’t been out either. She loves to be outside. We used to take her grocery shopping but this time it is best for her to stay at home and not be in a crowd.
When grocery shopping, she pushes the cart to keep her balance but with her habit of touching her face it is really not a good idea for her to be exposed in public. This is going to be interesting, at some point she has to go out. I can’t wait for the vaccine to be available!
Anyway, if I am spending Mother’s Day with my mom I will cook Shrimp and Mushroom Stir Fry as she loves shrimp. Also, with the current situation it might be easier to get shrimp compared to beef, pork or chicken.
How to Cook Shrimp and Mushroom Stir Fry
The best thing about this dish, it doesn’t take too much time to prepare and cook. Thirty minutes is all you need.
The ingredients are shrimp, mushroom, green and red bell pepper, onion, garlic, green onion, Shaoxing rice wine, soy sauce, sesame oil, garlic powder and salt.
Peel and devein the shrimp.
For easy preparation, you can buy sliced white mushroom but I prefer to get whole mushroom. I like to slice the mushroom thicker into 3 cuts, but this is optional.
Some people are not a big fan of mushroom, instead use fresh asparagus or water chestnut to give it a crunch on every bite.
Deseed and dice the green and red bell pepper, mince the garlic, chop the green onion and chop the onion. You can julienne some onion as garnish.
Don’t skip the Shaoxing cooking rice wine if you have it. Sherry or dry white wine can be used as substitute.
Start with ½ teaspoon of sesame oil and taste. Some people like myself prefer a subtle taste of sesame oil. You can add some more if you like.
Once all the ingredients are ready. It takes 15 to 20 minutes to cook. This dish is delicious if shrimp, mushroom and vegetables are not overcooked.
Saute onion and garlic. Then stir fry shrimp for a minute. Add mushroom, green and red bell pepper and seasoning. Continue cooking until shrimp is cooked through. Transfer to a serving plate and garnish with green onion and julienned onion.
This dish is delicious while hot and served over white rice.

Shrimp and Mushroom Stir Fry
- 1 medium onion ¾ chopped (saute) & ¼ julienned (garnish)
- 4 garlic cloves minced
- 18 large shrimp peeled and deveined
- 1 red bell pepper deseeded and diced
- 1 green bell pepper deseeded and diced
- 1 8oz 227g white mushrooms, sliced
- 1 ½ tablespoons Shaoxing rice wine
- 2 1/2 tablespoons soy sauce
- ½ - 1 teaspoon sesame oil
- ¼ teaspoon garlic powder
- ¼ cup green onions chopped
- salt to taste
- 2 tablespoons olive oil
- In a skillet, add oil over medium heat.
- Stir fry onion for a minute.
- Add garlic and cook until golden.
- Stir fry shrimp and cook for a minute.
- Add mushroom, green and red bell pepper, Shaoxing rice wine, soy sauce, sesame oil and garlic powder.
- Continue cooking until shrimp is cooked through.
- Season with salt, if needed.
- Transfer to a serving plate and garnish with green onion and julienned onion.
- Serve with white rice. Enjoy!
