This Shrimp and Mushroom recipe in aromatic cilantro and parsley is easy and ready in 20 minutes.

For a quick weeknight dinner, prepare this delicious shrimp and mushroom that everyone will enjoy.

Anything made with shrimp is usually quick, easy and tasty. Shrimp cooks in a few minutes just like mushroom and they pair well together.

It is versatile and add some of your favorite vegetables.

Ingredients substitute

Butter – butter enhances the flavor of food but can be omitted. Instead, increase olive oil to 2 ½ tablespoons.

Baby Bella Mushrooms – are also marketed as crimini mushrooms or baby portobello. You can replace it with shitake or white button mushrooms.

Garlic Powder – replace with 3-4 fresh minced garlic cloves.

Onion Powder – replace with ¼ cup chopped yellow onion.

Cilantro and Parsley – fresh is much better but dried will work as well. As a general rule, 1 tablespoon fresh herbs to 1 teaspoon dried herbs.

Note: If you use fresh garlic and onion, after melting butter and adding olive oil, saute onion for a minute then add garlic and cook until golden. Continue cooking with step 3 of recipe.

How to prepare shrimp

In the US, you can buy peeled and de-veined shrimp in different sizes. If your only option are head-on and shell-on shrimp, you have a few tasks to do before cooking.

Snap the shrimp head from the body or cut it with a knife, peel the shell and remove the tail.

Lastly, devein the shrimp. Make a shallow incision at the back of shrimp and remove the vein.

What is the yellow stuff in the shrimp head

If you snap the head, some yellow stuff can still be attached to the body. Just wash it off.

The yellow stuff is called hepatopancreas which is the primary digestive organ of the shrimp. It is similar to the yellow stuff found in crabs and lobsters called tomalley.

Some people get grossed out by this and they refer to it as “poop”. It is not. In fact, it is the tastiest part of the shrimp and a delicacy in other countries.

In case you don’t know, it is use to flavor sauce and soup.

Tips

  1. Thaw shrimp overnight in the fridge or place frozen shrimp in a zip lock bag, seal and fully submerge in tap water for 20 to 30 minutes. Place something heavy on top of bag.
  2. Do not overcook shrimp. It can get rubbery. Mushroom is more forgiving.
  3. As much as they say not to wash mushroom, I do wash mine. So if you like to wash it, place mushroom in colander and wash quickly with tap water. Drain water and wipe mushroom with paper towel.

Storing leftover

Refrigerate leftover shrimp and mushroom in an airtight container up to 2 days. Mushroom does not freeze well so I don’t suggest freezing leftover.

Ingredients

  • 1 tablespoon unsalted butter
  • 2 tablespoons olive oil
  • 1 pound baby bella mushrooms whole
  • 1 pound jumbo shrimp peeled and deveined
  • ¼ cup water optional
  • ¼ cup fresh cilantro chopped
  • ¼ cup fresh parsley chopped
  • ½ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • salt and pepper to taste

Instructions

  • Place baby bella mushrooms in a colander and wash quickly, if desired. Drain and dry with paper towel.
  • In a skillet over medium-low heat, add butter to melt then olive oil.
  • Adjust heat to medium, add baby bella mushrooms. Cook for about 2 minutes.
  • Add shrimp. Stir-in cilantro, parsley, garlic powder and onion powder.
  • Cook shrimp for about 3 to 4 minutes or until shrimp color turns pink . Note: You can add ¼ cup water to have some sauce. Mushroom and shrimp will also release some liquid.
  • Salt and pepper to taste.
  • Transfer to serving bowl right away so shrimp does not overcook. Enjoy!

Notes

    Perfect!
    The only thing I changed was using one tablespoon of red pepper infused olive oil along with the one tablespoon of regular olive oil to give it a tiny kick.
