Watermelon Cucumber Feta Salad is so refreshing especially during summer time. Watermelon is abundant at this time of year and it is at its sweetest. Best time to make this delicious Watermelon salad with cucumber and feta.
I was at the store yesterday and huge sized watermelons were on sale for only $2 each. How can I passed up a great deal especially it was grown here in our State. They are usually sweet and juicy.
As much as I am embarrassed at times when someone is looking, I had no qualms in tapping the watermelon if ripe but not too ripe. I still doubt myself sometimes if I really know how to pick the right one.
The way I learned it from my parents is to tap it with my fingers and if the sound is bouncy then it is a good fresh watermelon. If sound is flat, then it is over ripe.
As you can see from my images, it is juicy and bright red. Ultimately, I guess I can now say that I’m becoming an expert in selecting watermelon.
If you have read my previous post on watermelon, I was never a fan when I was younger especially when the core felt grainy which everyone in my family raved as the best part. Well, I guess I missed out when I was younger.
Now, it is a different story. I’m older, I’m wiser and my taste buds has changed. I craved for it.
Summer means watermelon are everywhere and I take advantage of this time making anything watermelon. Salad, smoothie or drinks.
When we were kids, my mom at times would make watermelon candies (kundol) using the white part which I haven’t tried making. She used it as a filling for hopia too.
This salad is not just great for lunch or dinner, but as a healthy snack. Instead of having chips opt for this refreshing, healthy salad.

Tips Making Watermelon Cucumber Feta Salad
If you are not keen in picking watermelon, some stores sell half watermelons and from there you can tell from its texture and color. You can see if it is juicy or overripe. Or if you like it whole, do the tapping I mentioned above.
Chill the watermelon and cucumber beforehand if you plan to eat it right after making it, otherwise it is best to chill an hour before serving. It is so refreshing when flavors have blended well.
You can cut both watermelon and cucumber however you prefer to do it.
Slice the watermelon in cubes or for a better presentation use a melon baller. If you have one, you know it is not hard to use especially with watermelon.
If you don’t care for the cucumber skin, peel it all the way. I like to alternate peel, as the skin adds crunch and color to my salad. Colorful salad is appetizing in my opinion.
It will stay good and fresh for up to two days in the fridge. In fact, I love it more once it has released its juice.
Eat it by itself or serve it as a side with meat, chicken or fish. Today, I paired it with dried herring (tuyo) and it was delicious.
Make sure to use red onion, feta and fresh mint leaves. Red onion adds crunch and so much flavor while feta adds a tangy and salty flavor and mint is so refreshing when added to salad.
By the way, the mint leaves are from my garden. During summer, you can grow it and it can also survived a mild winter. So handy to have it growing in my garden.
I don’t add salt as feta is already salty. If you decide to use salt, after making, let it sit in the fridge for a while and before serving – taste then add salt, if needed.

Watermelon Cucumber Feta Salad
Ingredients
- 6 cups watermelon cubed
- 1 medium cucumber diced
- ¼ cup red onion chopped
- ½ cup crumbled feta
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- 2 ½ tablespoons mint leaves chopped and a few whole leaves for garnish
- salt and pepper to taste
Instructions
- Prepare all the ingredients.
- Dice the watermelon or use a melon baller.
- Alternate peel the cucumber or fully peel then dice.
- Chop the red onion and mint leaves. Leave some whole mint leaves for garnish.
- Place the watermelon, cucumber, red onion, feta and chopped mint leaves in a salad bowl.
- In a small bowl, combine olive oil, lime juice and honey. Mix well. Pour this mixture in the salad bowl and combine all the ingredients.
- Pepper to taste.
- Chill for an hour before serving.
- Feta is salty so I suggest to add salt before serving. Once the flavor has blended, taste and add salt if needed.
