If your New Year’s resolution is to eat more leafy greens, add this delicious salad to your daily menu. You will love it. It is a combination of greens, fruits, nuts and cheese. What’s not to love!

Ingredients to make this salad

Strawberries are in season and they are huge and sweet. They add so much flavor and blends beautifully in salads. If you are like me, a colorful salad is more appealing and appetizing to have.

Spinach is great with any salad. Use fresh crisp baby spinach for a wonderful, filling salad.

Adding nuts to salad gives it another layer of flavor, texture and crunch. I love having something crunchy in my salad. It is much easier to chew those leafy greens with nuts. Candied Walnut is delicious by itself but paired with this salad is quite a treat.

For a tangy and subtle salty flavor, top your salad with some crumbly feta cheese.

Blend all these ingredients and you have a scrumptious salad for lunch, dinner or a side dish. Give it more flavor by tossing in some red onion, cherry tomatoes and grilled chicken.

When I was working it was easier to order food than make it. After working overtime, all I wanted to do was eat. It was a routine and ordered this salad once a week.

It is a popular salad on their menu called Strawberry Delight paired with Orange Poppy Seed Dressing. I ordered the large portion with diced grilled chicken so I can have leftover for lunch the following day. It was delicious but quite expensive for $20.

I have my moments with salad, but I can have this Strawberry Spinach Salad with Candied Walnut & Feta anytime. It is one of my favorite salad and I crave for it.

3. Use goat cheese or Asiago cheese instead of feta.

4. Plain walnut, almond or pecan instead of candied walnut.

5. Don’t like red onion then use shallot or don’t even use it.

Yes, you may. You can leave the Garlic Vinaigrette Dressing in room temperature while the Orange Poppy Seed Dressing should be refrigerated.
